Gourmet cooking unique to downtown Provo can be tasted at Communal. Local owners Colton Soelberg and Joseph McRae are former Sundance Resort chefs who were the creators of Pizzeria Seven Twelve in Orem.
Communal is styled around the idea of Sunday dinner with starters, sides, main dishes and desserts ordered a la carte. The food is prepared and cooked in the dining area of the restaurant. Both chefs are focused on using local sustainable producers and purveyors. They do this because it not only allows the best food around to be served, but also keeps money within in the Utah Valley community.
Communal’s ambience is 20th century modern and provides an unusually friendly atmosphere. Reservations can be made, parties and functions are welcome, and catering and off site parties can be done.
Lunch is provided Tuesday through Friday from 11:30 a.m. to 2:30 p.m. Start off with a salad with frisee lettuce, Allred farms apples, toasted almonds, and braised bacon. Try the house made sausage, cabbage, apples, smashed potatoes for your main dish with a side of potato leek gratin or braised Swiss chard.
Dinner is provided Tuesday through Saturday from 5p.m. to 10p.m. To start the night taste the melted onion tart, frisee, chives, poached farm egg, bacon vinaigrette. For the main dish experience the delicious flavors of the pan-seared blue nose bass or the airline chicken breast with a side of pan-roasted mushrooms or potato gratin. If there is still room for a little dessert, try the butterscotch pot de crème or pear pandowdy.
